Foodie Friday: Rainbow Cupcakes for St. Patrick’s Day

Today I am sharing these super-fun Rainbow Cupcakes for St. Patrick’s Day and linking up with the Foodie Friday bloggers!  I saw these on the cover of All You magazine and knew I had to make them for the sheer joy they would bring my kids.  I made the icing green (instead of blue) for some St. Patrick’s Day oomph.  Both my kids had big smiles when they saw their rainbow cupcakes waiting for them after school, it was so cute!  I don’t know what I like better, the rainbows or the marshmallow clouds :).  Side note:  The Airheads Xtremes Rainbow Berry candy belts are SO AWESOME, sweet and sour and addicting…you’ve been warned!

Rainbow Cupcakes

Rainbow Cupcakes

Ingredients:

1 box of cake mix (or use homemade)

1 container of white icing (or use homemade)

1 small bag of mini marshmallows

food coloring

1 package of Airheads Xtremes Rainbow Berry candy belts

 

1.  Prepare cupcakes per instructions.  Let cool for at least 15 minutes.

2.  Add green food coloring just a drop at a time to the icing, mixing as you go.  Add until you get the shade of green that you prefer.  Add icing to the cupcakes.

3.  Add at least 3 mini marshmallows to one side and then the other side of each cupcake.  This will help support the rainbow when you try to place it.  After adding the Airheads Xtremes you can add more marshmallows for support.

4.  Add the Airheads Xtremes Rainbow Berry candy belt to the cupcake in the shape of a rainbow!  Place mini marshmallows against the candy for additional support.  The next time I make these I will open the candy package and let the candy harden a bit so they will stand up better!
