Pumpkin Caramel Delight

On one of my Walmart trips I picked up the Pillsbury Pumpkin Delight cake mix.  The photo on the box and the thought of pumpkin, caramel and cream cheese icing grabbed my attention.  It was a simple little dessert and the end result is delicious and quite pretty.

Pillsbury Pumpkin Caramel Delight Per the directions, I mixed the batter and baked it in a 13 x 9 pan.  Then you need to cut the finished cake in thirds so that you can stack it with cream cheese frosting in between.  I didn’t realize this would make for a tiny cake, about 4 x 8 in size.  If you are making this for a few people it would be fine, otherwise portion size will be a thin sliver :).  The last step is adding the caramel sauce and almonds on top.  Easy!

Pumpkin Caramel DelightOverall, it was fun, simple to make, and SO delicious…even Ollie (who is 6) ate his piece and he usually just eats the icing off of cake.  This would be a very nice dessert for a Thanksgiving dinner and it costs just a few dollars.
